This is the appetizer version of the dough famously used in Alsatian Flammekueche, now called Tarte Flambe´e. Tart Flambe means "flame cake", and it gets that name because it's baked in a wood-fire oven, like a pizza. It's usually topped with cheese - gruyere and munster are the classics -, mushrooms, and many other ingredients. The hard work is done for you, just top the dough with your ingredient of choice and bake!
