Parmigiano Reggiano, Artisan From Emilia-Romagna in Italy, comes this wonderful artisan Parmigiano, made in the Bonati farm using the milk from their specially-fed cows. These lucky cows get to eat corn, orzo flakes, fava beans and soy, developing a a super flavorful milk. Bonati makes only about 4 wheels a day, and each one is perfection. The cheese is aged about 2 years, developing flavors that are well-balanced, buttery and sweet, with caramel notes. Pair with a full-bodied red wine.
