Cantal, Jeune Cantal is one of the most traditional of France's cheeses, but surprisingly hard to find outside of the country, making this Cantal Jeune (Jeune meaning "young") all the more special. It is aged around 1 to 2 months, making it mild and pleasurable to most tastebuds. It develops a thin rind (not edible), that should be cut out to eat. As it ages it becomes more crumbly and intense, but is enjoyable at any time. Bring to room temperature before serving to release flavors. Perfect for use in gratin dishes, soups, fondues or any dish that calls for melted cheese. Also excellent with fruit and nuts on a platter, sliced thinly. Serve with any fruity red wine, especially Beaujolais, or a sweet white.
