Raclette de Savoie A cow's milk cheese from the Savoie region of Switzerland, Raclette is a firm pale yellow, aged for about 4 months. What makes this cheese special is the dish or cooking technique named after it. Raclette is traditionally heated a top an electric grill with a stone top, and, once melted, scraped off (to "racler" means "to scrape") and eaten with boiled potatoes, cured meats and thick slices of bread. This cheese develops an intense aroma as it heats up, and the flavor is buttery, mild and slightly fruity. Raclette can is also excellent as a table cheese or used for grilled cheese, fondues, French Onion Soup and more! Serve with a Vin de Savoie wine or Riesling, or warm cider.
