Challerhocker More and more Swiss cheesemaking is going further than the ubiquitous holey and yellow "Swiss cheese" that we have incorporated into our life. Introducing Challerhocker, pronounced "holler hocker" and meaning "sitting in the cellar" (where the cheese is aged for a bit under 12 months). Unlike the traditional "Swiss" cheese, Challerhocker has a smooth paste, without any holes or cracks. The initial aroma and flavor is of roasted peanuts and caramel (yum!), with sweet notes and a lingering salty finish. Dense and silky, it is easily cut with a table knife and is perfect for sandwiches and paninis, or for a cheese board. This cheese is bold, so pair it with a sweet Sherry or Madeira.
