Fontina Val D'Aosta From the Italian Alps, Fontina Val D'Aosta is an old, traditional Italian cheese with a rustic, bold flavor. Produced in the Valle D'Aosta from raw cow's milk, Fontina is aged for three months in caves, developing a complex, earthy taste with hints of mushrooms and truffles, and a firm yet supple texture with small openings. This dense, grassy and nutty cheese is a marvel, and can be used for snacking, sandwiches, and cheese boards. For cooking, pair with roasted meats and truffles to bring out all the intricate flavors, and serve with a big Barolo red wine. Bring to room temperature before serving to fully develop the aromas and flavor.
