Gamonedo Gamonedo is a very rare and unique cheese, made in limited production in Asturias, Northwest Spain. It's definitely a complex cheese: it is made of mixed milk (cow, goat AND sheep), but it also naturally blue-veined; it's aged in caves for 3 months AND smoked in apple wood for about two weeks. The result is a phenomenally rich cheese, with a very intense flavor, filled with blue and smokiness, as well as spiciness and bite. Keep this one for a special occasion, instead of your regular cheese board. Pair with Sherry or Madeira to balance out the intensity.

Ingredients: made from cow and goat's raw milk, rennet and salt.
