Bleu des Causses Bleu des Causses is a French cow's milk blue cheese from the heartland of France. Aged in beautiful natural limestone caves that are ventilated by "fleurines" - natural chimneys - this cheese is a milder version of Roquefort, and looks very similar. It is buttery but also firm and crumbly, with a very agreeable balanced aroma. Try it as an alternative to Roquefort, for cooking with meats and sauces, or serve as a dessert cheese with a sweet white wine.
