Leonora Leonora is a farmstead, artisan Spanish goat cheese from the region of Castille and Leon in Spain. The "Leon" part is what gives the cheese its name, of course. Leonora is just fabulous, there is no other way to describe it. The thick, moldy and dusty rind (which we recommend that you remove, as it has a quite bitter taste) covers a paste that is phenomenally creamy, thick and dense that coats the tongue and lingers in the palate. Right away you'll notice the aroma, lemony and herbal. The flavor is tart, with grassy notes and a hint of sour cream. Lush and moist, Leonora is spectacular as a dessert cheese; drizzle with honey and serve at the end of a meal. Bring to room temperature before serving. Pair with your favorite sweet white wine.
