Pecorino Foglie di Noci in Walnut Leaves Pecorino Foglie di Noci is made like a typical pecorino, out of sheep's milk aged in airy caves in Tuscany. Foglie di Noci though is wrapped in walnut leaves before the aging of 2-4 months commences, infusing it with an earthy, nutty aroma and flavor. Throughout the aging process the cheese is also rubbed daily with oil, giving it that distinct oiliness on the paste. The flavor is full and nuanced, with hearty notes of walnuts, mushrooms and the sweetness of the flowers and grasses that the sheep have fed on. The texture is on the harder side, and can be crumbly or flaky, but retains that smooth oiliness to it. Pair with a bold red like a Sangiovese wine.
