Fourme d'Ambert One of the oldest cheeses of France, Fourme d'Ambert is a cow's milk blue cheese made in Auvergne. Originally this cheese was sold at the market of Ambert, hence the name. Fourme D'Ambert is a very mild blue, with a dense and creamy texture and overtones of mushrooms and just enough saltiness. It develops a moldy rind with naturally occurring mold, but the interior is white with a good amount of blue veins and pockets running through. This is a good cheese to have on cheeseboard, for its mildness is sure to please even the most moderate tastes. Also perfect to cut and spread on rustic bread, or to crumble over a salad. Pair with a sweet Vouvray wine.
