Truffle paste is like a truffle spread. It's made by blending white or black truffles with milk, salt and other ingredients to create a smooth and thick paste that is speckled with pieces of truffle visible to the eye. The result is a product that ranges in the middle spectrum of intensity (stronger than a truffle juice and preserved truffles, not as strong as fresh truffles). It is shelf-stable, so it doesn't need refrigeration. You can whisk it into pasta or risotto and any dish to add truffle flavor.
