Zita, known as Ziti in American, is a pasta cut from Southern Italy. Short, smooth and straight, they're especially recommended for light soups like broths or consommés, enriched with croutons and thinly sliced vegetables, thick creamy soups, and go best with meat and vegetable based ragus, or vegetable-based sauces prepared with tomato sauce and peppers, eggplant, zucchini, olives and capers.
