About Shoyu Shio - Soy Salt

Shoyu Shio - Soy Salt Using a technique called mushiro-koji that's 250 years old, Kamebishi prepares this exotic product known as Shoyu Shio or soy salt. Soy salt is made artisanally, by layering soy and wheat in mats of bamboo and rice straw, and then fermented for three years in a controlled environment. The result is a salt that is coarse and dark, with a meaty flavor and crisp and flaky texture. Rub it on fish, meats, grilled vegetables, and pretty much any dish you want.
