These tiny Nicoise-style olives are cured for several months in a simple sea salt brine, with Provence thyme. The result is a lovely cocktail-sizes olive with a fruity flavor and great juiciness. Arnaud has been a family-run olive company since 1947, with each generation passing down the tricks and secrets of the olive trade, and adding new and inventive recipes to their collection.
