Tiny and tender French bush type beans, very popular in French cooking, Flageolets or Green Kidney Beans, are often served as a complement to lamb. They pair well with most meats and fish, as they're very light. Their shape holds well after freezing and cooking, and these Flageolets are quickly frozen to retain flavor and texture. Directions: Place the frozen beans in saucepan and cover with water. Add garlic clove, carrot, bay leaf, thyme and pepper. Bring water to full boil and simmer for 3 minutes, add salt and simmer for another 3 to 4 minutes or until tender. Drain and season to taste. Serve at once. Store in freezer below 0°F (-18°C). Keep frozen until ready to use. Do not thaw and refreeze.
