Prosciutto San Daniele - Boneless It's not easy to become a product as exclusive as Prosciutto San Daniele. Firstly, the pig thighs must come only from pigs bred in ten regions of Northern Central Italy (Friuli Venezia Giulia, Veneto, Lombardy, Piedmont, Emilia Romagna, Tuscany, Lazio, Abruzzo, Marche, Umbria). Secondly, ancient production methods must be followed, meaning that any form of freezing of the meat is forbidden, the fresh thighs must rapidly reach the small hill town of Friuli, and there must be no use of chemical additives or preservatives. Finally, the final development must occur at San Daniele del Friuli. Here the good air prevails, where the winds that descend from the Carnic Alps meet those coming from the Adriatic, creating a microclimate unlike any other. The ham must be aged for at least 12 months, creating a product that is a lovely reddish-pink, fringed with delicious fat, with a sweet and salty flavor that is incomparable. Truly a delicacy for the connoisseurs.
