Bianco Sardo

Bianco Sardo is a unique sheep’s milk cheese similar in texture to other hard Italian cheeses like Parmigiano Reggiano or Pecorino Romano. However, understated Bianco Sardo has a noticeable tanginess but is not as salty as parm. It presents lovely notes of fresh grass and that beautiful oiliness that comes from sheep’s milk. This is a classic yet underrated Italian formaggio: crumbly and dry, but fatty and creamy on the palate.

The cheese is molded and aged in reed baskets, which gives the rind a beautiful imprint and which also gives it another name, Canestrato. It also imprints the flavor and aroma of the cheese, giving it herbaceous touches. Bianco Sardo comes from Sardinia, a gorgeous island in the equally gorgeous Mediterranean Sea. This sharp, full flavored cheese is made from the milk of sheep that graze in the Apulian fields.

Bianco Sardo cheese melts beautifully over a pizza or panini, and it is perfect to grate over pasta, instantly adding a sharp aroma and a flavor that’s nutty with notes of caramel.
