



Depleted sturgeon populations in the Caspian Sea have forced caviar lovers to start looking away from the traditional sources of caviar - Russia and the countries of the old Soviet Republic - and go elsewhere to find the prized pearls. Many different countries have risen to the challenge - the United States with it's own domestic species of sturgeon and other fish, as well as several aquafarms around the world - Israel, Italy, Germany, Uruguay and France. Iran still delivers premium Caspian sturgeon caviars, while Azerbaijan, also on the Caspian Sea, does the same. There are a lot of fish in the sea (and rivers and lakes) to satisfy all our caviar cravings.
