



Italy, once at the crossroads of the world's finest trades, has always been fascinated with luxury, and has been producing caviar from sturgeon fished on the River Po since the 1500s. In the past decades the crafty Italians have imported Russian and Caspian sturgeon species, successfully introduced them to their own lakes, and now farm in their pristine lakeside sturgeon farms, some of the largest in the world.
