A virgin olive oil is made by production that does not include any chemicals, and an extra-virgin olive oil is made ONLY of virgin oil, with less than 0.8% acidity and judged to have a distinct taste. Within the realm of extra virgin olive oils you can also find a "cold pressed" oil, which means no heat has been used in the production, preserving the integrity of flavor of the oil.
