- 2 Ripe Avocados
- 1/4 cup Sparrow Lane Golden Balsamic Vinegar
- 1/4 cup Extra Virgin Olive Oil
- 2 Large heads Bibb lettuces (cut in quarters)
- 8 oz Mini Pearl or Cherry Tomatoes (cut in quarters)
- Salt to taste
- Pepper to taste
Directions
Finely mash avocados with the Sparrow Lane golden balsamic vinegar.
Mix in the remaining ingredients. Spoon over the bib quarters, top with quartered tomatoes.
Sprinkle with fresh ground salt and pepper.
