Mix the garlic and herbs with the olive oil. Slice the red bell pepper into 8 wide strips and slice the zucchini diagonally into long slices. Brush the pepper and zucchini with olive oil and roast on a hot grill until they are soft and golden brown. Slice the cheese. Cut the baguette into four equal pieces and cut these open lengthwise. Take the bottoms and layer them with half of the cheese, the peppers and the zucchini and top with the rest of the cheese. Put the tops back on, press the panini together firmly, and toast them in a grilled cheese maker for 6-8 minutes until they are done and golden brown.
