1. Rinse rice thoroughly, until the water runs almost clear. Drain well.
2. In saucepan combine coconut milk, water, sugar and sea salt. Stir well until the sugar
3. Add the rice and stir well. Bring the mixture to a rolling boil over medium-high heat.
Cover tightly, reduce heat and simmer 18 to 20 minutes. Check for doneness. The
grains should be soft enough to crush between thumb and forefinger and all the liquid
should be absorbed. Some coconut foam may normally rise to the top and can be
stirred back in. Fluff and serve.
