Frozen Maple-Pecan Nougat

Ingredients

125 ml (1/2 cup) pecans

250 ml (1 cup) maple syrup

4 egg whites

375 ml (1 1/2 cup) cream 35 %

45 ml (3 tbsp) maple sugar
Directions

Preheat oven175oC (350oF).

Roast pecans in oven until golden. Keep away.

In a pan, boil maple syrup on a mild fire for 4 to 5 minutes.

Beat the egg whites until firm and fluffy. Add hot maple syrup and whip for about 10 minutes to cool down the mixture.

Whip the cream. Add delicatly the egg whites. Add the pecans.

Pour in small buttered individual molds. Place in freezer for 8 hours.

Moment to serve: unmold by previously briefly dipping the molds in warm water.

Serve quickly. Garnished with oranges slices, mango and berries.
