Season and grill salmon steaks to desired doneness.
While salmon is cooking, combine chicken stock, balsamic vinegar, dark brown sugar, soy sauce and cornstarch in a saucepan. Bring to a boil, stirring constantly, cook 1 minute.
Spoon glaze over salmon, 1 tablespoon per serving. Top with capers. Serve immediately.
