Lemon-Salsify Spread

Directions

1. Preheat deep fryer to 365F. Deep fry almonds until golden brown, drain and set
aside. Deep fry bread until golden brown, drain and set aside. In food processor add
fried almonds & bread. Slowly add 4.5 cups olive oil until smooth paste. Salt to taste
and set aside. Heat saute pan with remaining olive oil. Sautee garlic & onions until
translucent. Add salsify and sautee for an additional 5 minutes. Add sauvignon blanc
and cook down until wine is about gone. 8 - 10 minutes. Salt to taste. Combine
vegetable mixture with nut paste into food processor…puree into chunky paste.
Transfer into stainless steel mixing bowl to cool. Set aside. Add all ingredients into
reserved nut/vegetable mixture and fold in until evenly mixed. Salt to taste.

paste.
14. Transfer into stainless steel mixing bowl to cool.
15. Set aside.
16. Add all ingredients into reserved nut/vegetable mixture and fold in until evenly
mixed.
17. Salt to taste.
