Marinated Nicoise Olives

Recipe Information

Yield:    1 to 1 1/2 cups
Cook Time:   20 minutes
Level:   Easy

Directions

1. In a small saucepan combine lemon zest, vinegar, olive oil, and lemon juice. Over
medium heat, bring to a simmer, then add oregano.
2. Remove from heat, add olives, and marinate at room temperature for 2 hours, then
refrigerate.
3. Bring to room temperature before serving.
