Once peeled and rinsed, chop the carrot, onion and bacon with a mincing knife. Melt butter in a saucepan and pour in with the mixture. After 2 minutes add the hare fillets in chunks; season with a pinch of nutmeg, salt and pepper and sauté over medium heat; add sifted flour and pour in the broth, constantly stirring, and cook for 15 minutes. Cook the pasta in plenty of boiling salted water, drain when al dente and transfer to a soup bowl; dress with the hare sauce and serve warm.
