6 oz White Toque Artichoke Bottoms
6 oz White Toque Extra Fine Peas
5 oz White Toque Peeled Fava Beans
3 oz Asparagus
3 oz Mango Chunks
5 oz Any Shape of Pasta
5 oz Fresh Plum Tomatoes
3 oz Fresh Fenel
3 Branches of Fresh Cilantro
0.5 oz. Dried Morello Cherries
1/4 c Passion Fruit Coulis
1/8 c White Wine Vinegar
1/2 c Olive Oil
1/2 c Lime Juice
Orange Peel
2 Fresh Spring Onions
Salt to taste
Pepper to taste
Directions
Slice the artichoke bottoms and sauté with olive oil. Cool down.
Cook the Fava beans, peas ad asparagus for two minutes and cool down.
Cook the pasta and cool down in cold water.
Cut in julienne the tomatoes and fenel.
Dice the mangos and Morello cherries.
Blend all the vegetables above, and add the fresh cilantro chopped finely, spring onion chopped finely and some orange peel.
Make the vinaigrette by mixing the passion fruit coulis, olive oil, vinegar and lime juice.
Season the vegetables with the vinaigrette, add salt and pepper if necessary. Place the salad in the refrigerator for 30 minutes before serving.
