Piquillo Pepper Saffron Sauce

Directions

1. Place shallots, cooking wine, vinegar, and saffron in a medium non-reactive saucepan
and reduce to 1 Tbsp. over medium high heat.
2. Slowly whisk in the cold butter pieces creating an emulsion.
3. Season to taste with sea salt and pepper. Fold in the piquillo peppers.
