1. In a fine colander, rinse rice well with running water until water runs almost clear.
Add rice and water to a medium saucepan and bring to a boil. Reduce heat, cover and
simmer for 12 - 15 minutes or until tender. Chill, stirring occasional to expedite
2. Combine sesame oil, olive oil, rice wine vinegar, and soy sauce. Mix or shake well.
3. Add cooled rice, mushrooms, celery, water chestnuts, green onions and chicken to a
large mixing bowl. Toss with dressing.
4. Just prior to serving carefully fold in mandarin oranges. Garnish with pineapple
