1. Rub salt and pepper on the surface of the steak. Cook the steak on a heated griddle
pan on both sides for a few minutes, depending on desired doneness. Set aside to cool,
before slicing thinly.
2. Prepare the noodles following the package instructions and rinse with cold water.
Drain the chilled noodles well and place in a large bowl along with the steak, red
onion, cucumber, tomatoes, red pepper, mint and cilantro.
3. In a small bowl, whisk together the lime juice, sesame oil, soy sauce, fish sauce,
brown sugar and Thai chili. Pour the dressing mixture over he beef and vegetables
and toss to coat evenly.
4. Plate and garnish with chopped peanuts. Squeeze lime juice over noodles and add
additional Sesame Oil if desired. Serves 4-6 generous servings.
