Ingredients: Boneless Chicken Thighs, skin removed, Madras Curry, Sea Salt, Fine, Pepper, Canola Oil, fresh lemongrass, outer stalks removed, ends trimmed; 5" of lower stalk minced find, Garlic, minced, Ginger, minced, large Onion, coarsely chopped, medium Sweet Potatoes, peeled and cut in 1" dice (3 cups), large Carrot, peeled and cut in 3/4" dice, Roland Coconut Milk, Fresh Lime zest , lime cut in wedges, Chicken Stock (if needed), fresh cilantro, chopped, salt and pepper to taste
