Peppercorns are quite simply the fruit or kernels of the pepper plant, which can be consumed either in brine or dried. The plant itself grows in many places around the world, but most predominantly Madagascar and Asia. Peppercorns can come in a mélange of colors - black, white, green, pink, orange and red. While the most common type is black, colorful peppercorns are a great way to add color to a dish - especially roasted meats.
