Rush Creek Reserve

Rush Creek Reserve is a complex cheese that exudes a very soft, delicate texture, almost custard-like, that boasts a savory, rich finish likened to cured meat. Overall, it has a mild taste, but with hints of smokiness.

Uplands Cheese only produces this velvety cheese in autumn as their cows’ diets begin to change from the fresh pastures of summer to the winter dry hay. The soft, young cheese showcases the richer texture of hay-fed milk.

After bringing it up to room temperature, you need to slice off the top rind of this tasty cheese to expose its soft center, which you can then scoop out and spread over a fresh baguette, paired with a sparkling wine or a dry white, like a Sauvignon Blanc or Pinot Grigio. Its creamy flavor complements several food types, from figs to braised meats. Or try it poured over toasted bread or roasted potatoes.

Rush Creek Reserve is produced on Uplands Cheese’s 300-acre farm, which is all pasture segregated into small paddocks. Their cows are moved to a different paddock every day to ensure the cows consistently produce healthy, flavorful milk by always eating fresh grass.
