About American Blues Cheese Sampler

A selection of three distinct and award-winning blue cheeses, the best America has to offer. Perfect to discover which one is your favorite and incorporate to your next cheese board.

Bayley Hazen Blue: Cow's milk. Named after an historic road that once brought settlers to Greensboro, Vermont Bayley Hazen Blue is a raw cow’s milk blue cheese with dense texture. The flavor is dark and sweet with notes of roasted nuts and hints of anise. Unlike most blue cheeses that tend to be spicy, Bayley is mellower and more herbaceous. Perfect to pair with a dark stout or a fruity red wine. It’s made at the famous Jasper Hill Farms, in Vermont, where stacks of cheeses are aged in carefully calibrated caves for the optimum ripeness.

Little Boy Blue: Sheep's milk. There are few blue cheeses made out of anything but cow's milk, and Hook's Cheese Company's award winning sheep’s milk Little Boy Blue is one of them. This young cheese, aged about 2 months, is made in Wisconsin. The texture is hard and crumbly, like Roquefort, but with a creamy and buttery feel. It has that wonderful pungent and salty quality that makes it a great choice for blue-cheese lovers. Use crumbled in salads, or served with crackers in a cheese board and pair with a Pinot Noir.

Echo Mountain Blue Cheese: Cow and goat's milk. A mixed milk Oregon blue cheese that is extra aged - from 8 to 12 months. That's far more than most of your average blue cheese, and it shows in the flavor development. Rogue Creamery uses raw goat’s milk and cow's milk, and they only send the wheels to market when they're just right. The result is a pale yellow cheese with blue veins throughout, with a nutty slightly tangy aroma, a mellow, creamy and buttery texture and a hint of pepper. Pair with a dessert wine.
