Made from any kind of milk, you’ll find blue cheese in cow, sheep, goat, even buffalo forms. Though the milk used to make the cheese affects the flavor of the finished cheese to a certain extent, the through-line of these cheeses, and the reason they all boast similar characteristics, is that they are all inoculated with the same form of mold: Penicillium roqueforti. The signature blue veins that marble the interior of the cheese are formed through a method called “needling.” Needling is the process where stainless steel rods are stabbed through the rounds of cheese. This allows oxygen into the wheels, promoting the growth of mold and giving blue cheese a softer, more open texture. Low in fat and high in several essential nutrients including, calcium, phosphorus, and protein. Blue cheese is positively brimming with health benefits, making it not only the delicious choice but the health-conscious one.
