Duck Breast With Berry Compote Recipe Instructions

  • 2 duck breasts
  • 2 cups frozen or fresh berries
  • ½ cup sugar
  • 3 large potatoes, peeled
  • Salt and pepper
  • 1 1/2 tbsp. olive oil

  1. In a pot over medium heat bring the berries and the sugar to a simmer, for 10 to 15 minutes, Remove from stove and let cool.
  2. Skin facing up, slice the duck breast on the diagonal and vertical, cutting about ½ inch into the breast and creating a grid pattern. Season with salt and pepper.
  3. Heat up a medium saucepan and place the duck breast, skin side down. Cook on medium heat until golden brown, then flip and cook the other side until golden brown.
  4. Remove from heat and let the breast rest for about 5-7 minutes.
  5. While the duck is finishing cooking and resting, start on your potatoes. Slice the potatoes into thin slices. Add the olive oil to a hot medium saucepan and sauté the potatoes until golden. Reserve warm.
  6. Slice and serve with potatoes and a tablespoon of berry compote.
