Easy Shrimp and Crab Po Boys Recipe

Easy Shrimp and Crab Po Boys Recipe Instructions

Ingredients
  • 2 lbs uncooked Jumbo Shrimp – cleaned, peeled, deveined, tails off
  • 6 oz Jumbo Lump Crab Meat
  • 1 cup mayonnaise
  • 1 cup sour cream
  • Juice of ½ lemon
  • Salt and pepper to taste
  • ¼ cup chopped dill
  • 10 oz butter (2 1/2 sticks) – 8 oz for boiling shrimp, 2 ozs melted for buns
  • 2 avocados
  • 6 Italian sub rolls or large hot dog buns

Directions
  1. Preheat your oven to 400°F.
  2. Prepare an ice bath by adding ice into a bowl, then putting a metal bowl on top, making sure the bowl sits above the ice so water doesn't get in.
  3. Make sure your shrimp are cleaned, peeled, deveined and tails off. In a large pan, melt 8 ounces of butter and add 3 cups of water, and bring to a boil. Add the shrimp, cook 2 minutes on one side, then 2 on the other side, making sure they're pink, and firm to the touch. Remove, drain and cut down the center, then chop into 1/2 inch chunks. Add to the ice bath, then add the mayo and sour cream, mixing well. Incorporate the lemon juice and dill, season with salt and and pepper and chill in the fridge, covered, until ready to serve.
  4. Melt 2 oz of butter and brush the inside of the Italian subs. Place them on a cookie sheet with parchment paper and cook in the oven until the ends start to brown, 3-5 minutes. Remove from heat and reserve.
  5. Halve the avocado, remove the pit, scoops out with half with a large spoon, then cut longways. Place 3-4 slices of avocado on each bun, and then fill the buns with the shrimp and crab salad.
