Far from Wyoming and the Grand Tetons, with nary a mountain ski resort in sight, these tiny Tetons still pack a punch. Deliciously creamy European chocolate mousse mixed with hazelnut praline, whimsically shaped like a miniature mountain range, and covered with a marbleized chocolate shell.
Hazelnut praline is a sweet paste made from hazelnuts and sugar that pairs remarkably well with dark and milk chocolates.
These dainty pyramids should be kept frozen until the day of serving. Carefully remove plastic cover while still frozen. Array on serving tray. Allow to thaw at least two hours in refrigerator before serving. Serve chilled, though not frozen.
If kept frozen, dessert has a 12 month shelf life, though after thawing Tetons should be kept refrigerated and consumed within 5-7 days.
