Goat Cheese and Prosciutto Frittata Recipe

A foolproof frittata recipe that requires no oven! This easy recipe is perfect for a filling lunch that won't weigh you down, or as an appetizer for a spring brunch. It's filled with flavorful ham and loaded with fresh goat cheese, and partnered with baby greens for a fresh touch. To make it vegetarian, remove the ham and add a non-meat alternative.

Goat Cheese and Prosciutto Frittata Recipe Instructions

Ingredients
  • 4 large eggs
  • 1 cup whole milk + 3 tablespoons
  • 2 ½ tablespoons parsley, chopped
  • 1/2 tsp. salt
  • ¼ tsp. freshly ground black pepper
  • 3 tbsp. extra virgin olive oil
  • ¾ cup red onion, chopped
  • 4 and ½ cups spinach, chopped
  • 9 slices Prosciutto ham cut into strips about 1/2 inch wide
  • 8 oz. soft fresh goat cheese like Vermont Creamery Fresh Goat Log, cubed

Directions
  1. Whisk the eggs together with the milk until smooth, then add salt, pepper and the parsley. Reserve.
  2. In a 10-inch fry pan, heat the olive oil at medium heat, then sauté the onions for 3/4 minutes or until soft. Reserve the pan.
  3. Add the onions, ham and goat cheese to the eggs and mix.
  4. Using the same pan you used for the onions, heat 1 tablespoon olive oil, then pour the egg mixture. Cook on high, covered until the egg is completely set. This takes about 15-18 minutes, depending on the pan. If it starts getting browned at the bottom, lower heat. Once cooked, remove from heat and serve.
