Italian Cheese Sampler

Italy makes some of the best cheeses in the world. With time tested techniques, high quality ingredients, and a lot of love, this Italian cheese board will delight a range of tastes and palates. Set includes 4 cheeses:

Bianco Sardo is a sheep's milk cheese similar in texture to Parmigiano Reggiano or Pecorino Romano, but its flavor is all its own. The tanginess is tempered with notes of fresh grass and it is decidedly less salty than parmigiano. This formaggio is crumbly and dry while also being fatty and creamy. A beautifully oily cheese.

A semi firm cheese, Blue di Bufala is made from the milk of water buffaloes at the Quattro Portoni dairy. Distinctly full-bodied, the texture is silky and buttery with a high butterfat content. Laced with blue-veining, the bold, blue taste is tempered with a sweet tang.

This artisan Parmigiano comes from Emilia-Romagna in Italy. Made at the Bonati Farm using milk from their specially fed cows. With the sole purpose of making flavorful cheese, they dine on orzo flakes, fava beans, and soy. Aged for 2 years, the wheels develop a well-balanced flavor that is buttery and sweet with light caramel notes. The Bonati Farm only makes four wheels a day and each one is perfect!

Sottocenere al Tartufo is a truly amazing cheese. An ash rind encases this dense cow's milk cheese made from a mix of milks from the morning and evening milking. The rich, yellowish paste is rich and pliable while the flavor is mild enough to highlight the incredible taste of the earthy Italian black truffles. Sottocenere means "under ash" and the cheese is further flavored with truffle oil and nutmeg, cloves, coriander, cinnamon, and anise.
