A: It is recommended to devein the foie gras especially when searing it, as the veins/nerves have a tendency to toughen up and become chewy when exposed to heat. To devein the foie gras you just need to carefully follow the nerves through the liver with very sharp knife so as to minimize the damage to the foie.
