Mustard seeds have been used as a spice since antiquity, and has its origins in India. You'll find it used in Indian cuisine for pickling. Brown and black mustard seeds tend to be hot and fiery, and more intense than the yellow variety. Fry them in oil and add them to curries and other dishes.
