Pecan Halves, Junior Mammoth

The name Pecan is an Algonquian word meaning “a nut that is cracked with a stone,” an apt name. Pecan nuts are tree nuts grown in Mexico and southern parts of the United States. They have a hard outer shell that requires a nutcracker to break open. It is messy, laborious, time consuming work. Which is why these already shelled pecans are so wonderful.

These pecan halves are Junior Mammoth pecans, a variety that is smaller that average but extremely flavorful. Junior Mammoth class bulk pecans have 251 - 300 pecan halves per pound. They have a light amber to amber brown color, and a mild nutty flavor. Like most nuts, pecans are a good source of fiber, protein, fat and some vitamins and minerals.

They can be eaten raw, served as a candied or spiced snack, or cooked any number of ways. Pecans are a versatile nut that can enhance both sweet and savory dishes. Often used in pecan pie, pralines, cinnamon buns, and other desserts; pecans are complimented by toffee, coffee, cinnamon, honey, and maple sweet flavors. They also make a classy garnish to meat and veggie dishes that are complimented by the mellow earthy flavor of roasted pecans.

Shelled pecans should be stored in an air tight container to retain freshness and flavor. They can be stored in a pantry for up to three months, a refrigerator for up to six months, and a freezer for up to two years. Pecans can be thawed and refrozen multiple times without loosing quality of texture or flavor.
