Quinoa Salad Recipe Instructions


  • ½ cup quinoa
  • 1 red onion, diced
  • 2 round tomatoes, seeded, peeled and diced
  • ½ red bell pepper
  • ½ yellow bell pepper
  • 4 tbsp.  extra virgin olive oil
  • Juice of ½ lemon
  • ½ tbsp. balsamic vinegar
  • Salt and pepper


  1. Boil water in a full medium pot and add the quinoa (previously rinsed carefully under cold water). Boil for 20 minutes, then strain under cool water and reserve to cool. Once cooled, add the rest of the ingredients and season with salt and pepper to taste.
