Turbinado Sugar
A type of brown sugar, Turbinado, also known as "raw sugar", is so named for the turbines used for the spinning of the sugar. Paler than regular brown sugar, Turbinado is obtained from the first pressing of the sugar cane, and therefore has larger crystals and a more marked molasses flavor. Lower in calories, it holds more moisture, so it's perfect for making those perfectly moist muffins and cakes.

Q: What is/are the advantages or disadvantages of raw (turbinado) Sugar. Does it affect cooking time? Could you decrease the amount of molasses ( or eliminate molasses)

A: Turbinado sugar is less processed than regular table sugar. Retains more of the sugar cane plants flavor and natural molasses. Cooking time is not affected. What it affected is the moisture in certain recipes. Turbinado sugar has more moisture than regular sugar. Would be best if used in cake recipes, making them rich and tender. However in doughs—like a pastry dough or cookie dough—it might not be the greatest idea to substitute one for the other. The extra moisture could throw off the recipe. Ideally should be used as a crunchy topping.
