Ubriaco del Piave Aged
Ubriaco del Piave is a delectable semi-soft cheese made using raw cow’s milk by Moro Latteria di Sergio in Veneto, Italy. Due to its red wine baths, it's fondly considered the “drunken cheese”. With a soft, supple texture when young that slowly hardens as it ages, Ubriaco is and aromatic. A fruity aftertaste of cherries and strawberries and a mild nutty flavor completes the flavor.
The cheese is immersed in tubs filled with red wine for 2 months. Afterwards enclosed in linoleum towels, Ubriaco is left to age for an extra 6 to 10 months, developing a a vibrant purple rind. This means that the preparation of this impressive cheese is dependent on Italy’s seasonal grape harvest.
The sharp and robust flavor of our aged Ubriaco del Piave makes it an exceptional addition to a cheeseboard. Serve with some fresh Foccacia and olives. This hearty and tangy cheese is superb paired with a a generous glass of red wine: a Cabernet Sauvignon or Chianti, if you want to stick to an Italian theme.
Ingredients: Pasteurized cow's milk, rennet, salt, rind treated with Refosco wine.
