One of our favorite smoked salmon recipes, these bite-sized smoked salmon sushi appetizers are filled with tasty shrimp, juicy sweet mango and smooth avocado. Drizzle it with a homemade dark and sweet eel sauce for a final touch.

Avocado Shrimp Smoked Salmon Appetizer Rolls Recipe Instructions

Ingredients

  • 6 slices of smoked salmon
  • 1 ripe mango, julienned
  • 1 avocado, julienned
  • 6 shrimp, deveined and cut in half
  • 1 tbsp. tobico caviar for garnish
  • ½ cup soy sauce
  • ¾ cup white sugar
  • ½ cup mirin sauce
  • fresh dill

Directions

    1. Clean the shrimp and boil them in 1 tbsp. of lemon juice. Set aside and reserve.
    2. Get your eel sauce started by bringing soy sauce, white sugar and mirin sauce to a boil. Reduce heat and simmer until the sauce is thick. over medium heat. Reserve.
    3. For the rolls, cut the smoked salmon into long rectangular pieces, about 1 inch wide.
    4. Place a bit of mango, a bit of avocado and 2 pieces of shrimp the center of the smoked salmon piece, and roll up. Garnish with dill, 1 tsp. of tobico. Drizzle with eel sauce and serve.
